Build and steel
The Victorinox is stamped Swiss steel with a grippy plastic Fibrox handle, light, cheap, sharp, and entirely replaceable. The MAC is a VG-10 core ground 2.5mm thin in Japan, harder steel, keener edge, longer edge life, and a knife you maintain rather than replace.
In use
In the guide’s six-week test the Victorinox did everything asked of it, which is why it wears the Best Value badge. What the MAC adds is refinement: cleaner cuts, less wedging through dense veg, and an edge that stays keen for a month of daily prep instead of days.
Price and value
This is really a question about your next five years, not the £136 gap. The Victorinox is the right first knife; nobody regrets it.
